• Mayonnaise mixed with hot sauce, folded into tuna fish with celery and onions and served on toasted sourdough bread.

• Whole veggies (red bell peppers, zucchini, scallions, etc.) brushed with olive oil, hot sauce and then grilled.

• Chopped onions, grated cheese and hot sauce as topping for baked potato.

Preparing Perfect Popcorn

Whether you choose to pop popcorn in an electric popper, on the stove, or over an open fire, follow these tips for perfectly popped popcorn:

 

• First warm the heavy pan or heavy skillet. Be sure the lid of the pan is loose enough to allow steam to escape.

• Add 1/4 cup of cooking oil to the pan. Vegetable oils are low in saturated fat. Allow the oil to heat. The best popping temperature is between 400-460 degrees.

• Test the heat of the oil by dropping in one or two kernels. When the kernel pops or spins in the oil, you’re ready to add the remaining popcorn. Pour just enough kernels in to cover the bottom of the pan.

• Cover and shake the pan to be certain the oil coats each kernel. When you hear the popcorn popping, shake the pan back and forth until you hear the last few pops, remove the pan from the heat and empty the popped popcorn into a large bowl.

 

Kernels that do not pop are known as “old maids”. They do not have sufficient water contained within the starch to create the build up of pressure needed to pop the kernels.

Savannah Drink Mix Recipes

 

Southern Praline Dip

Blend with an electric mixer: 8 oz. softened cream cheese, 1/4 to 1/2 cup chopped pecans, 1/2 cup powdered sugar and 1/4 cup Southern Praline Mix. Serve with cookies or apple slices.

 

Tips:

Replace water in boxed cake with Southern Praline. Ice with recipe above.

You can mix the Praline with butter and spread over waffles, pour over ice cream or add to milk or coffee for another great taste!

 

Terrific Whipped Toppings

Add 3 to 4 oz. of Southern Praline Mix to thawed 8 oz. package of whipped topping. Stir lightly. Serve with butter cookies, fruit slices, pound cake or in coffee.

 

Pecan Praline Crunch

(Easy Party Food)

Stir together 8 cups Quaker Oats Cereal and 2 cups pecan halves in a 13x9 pan. Melt 1/4 cup butter, 1/2 cup brown sugar, 1/2 cup Southern Pecan Mix and 1/2 teaspoon baking soda. Heat until boiling and gently cook for 2 minutes. Pour over cereal and nuts. Stir to coat well. Bake at 250 degrees for one hour. Spread on cookie sheet to cool.

 

Praline Nutcracker

Preheat oven at 275 degrees. Line a 12x17 baking pan with aluminum foil. Tightly arrange 12 graham crackers, broken along markings into 48 pieces, in bottom of the pan. Sprinkle evenly with 1 cup chopped pecans. Combine 3/4 cup butter with 1/2 cup sugar in a sauce pan. Bring to a boil and cook for 3 to 4 minutes. Stir in 1/2 cup Southern Praline Mix. Pour over graham crackers. Bake at 275 degrees for 20 minutes. Cool and remove from pan.

 

Praline Toddy

1/2 cup corn syrup

1/4 cup sugar

1 egg, beaten

3 tbsp. butter

2 tbsp. Southern Praline Mix

1/2 cup chopped, toasted pecans

3 tbsp. bourbon or rum

 

Combine first 4 ingredients in heavy saucepan. Bring to a boil over medium heat, stirring constantly. Continue to boil for 2 minutes without stirring. Remove from heat and stir in remaining ingredients. Serve warm or at room temperature. Makes about 1 large cup.
