Grilled Homegrown Cucumber Pineapple Sage Recipe


This week we focus on some fun summer recipes with our homegrown vegtables. That means grilling! These recipes and simple, easy and bursting with flavor. From grilled corn dip or fresh homemade peach salsa, perfect for football parties, to the refined taste of the grilled pineapple, sage and cucumber salad there is something for everyone. we even have another fun drink recipe.  Homegrown Trax Farms Grilled Corn Dip

Trax Farms Grilled Corn Dip

6 medium ears sweet corn, husks removed
1 large homegrown Trax Farms Wawa onion, chopped
1 homegrown Trax Farms jalapeno pepper, finely chopped
2 tablespoons butter
2 garlic cloves, minced
1/2 cup sour cream
1/2 teaspoon chili powder
2 cups (8 ounces) shredded Boars Head Monterey Jack cheese
1 can Dellalo sliced ripe olives, drained
2 tablespoons sliced green onions
Tortilla chips

Grill corn, covered, over medium heat for 10-12 minutes or until tender. Turn occasionally. Cut corn from cobs. In a large skillet, saute the onion and jalapeno in butter for 2-3 minutes or until almost tender. Add corn and garlic; saute 1-2 minutes longer or until vegetables are tender. Remove from the heat. In a large bowl, combine sour cream and chili powder. Stir in cheese and corn mixture. Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 400° for 25-30 minutes or until bubbly and golden brown. Sprinkle with olives and green onions; serve with chips.

 Grilled Vegetable Medley Recipe Trax Farms

Grilled Vegetable Medley 

1/4 cup Dellalo olive oil
1 teaspoon salt
1 teaspoon dried parsley flakes
1 teaspoon dried basil
3 large ears of homegrown Trax Farms Sweet Corn, cut into 3-inch pieces
2 medium homegrown Trax Farms zucchini, cut into 1/4-inch slices
1 medium homegrown Trax Farms yellow summer squash, cut into 1/4-inch slices
1 medium homegrown Trax Farms sweet wawa onion, sliced
1 large homegrown Trax Farms green pepper, diced
10 homegrown Trax Farms cherry tomatoes
4-1/2 ounces whole mushrooms, drained
1/4 cup butter

In a large bowl, combine the oil, salt, parsley and basil. Add vegetables and toss to coat. Place on a double thickness of heavy-duty foil (about 28 in. x 18 in.). Dot with butter. Fold foil around vegetables and seal tightly.
Grill, covered, over medium heat for 20-25 minutes or until corn is tender, turning once. Open carefully to allow steam to escape. Serves 8.

 Grilled Cucumber Pineapple Sage Recipe Trax Farms

Grilled Pineapple, Cucumber and Sage

1/2 cored pineapple, cut into 1/3-inch-thick half- or quarter-moons
1 small homegrown Trax Farms cucumber,thinly sliced
1/8 cup Sage
1 tablespoon Dellalo extra-virgin olive oil
1/2 teaspoon coarse salt
Freshly ground pepper

Heat grill to high. Grill pineapple until grill marks appear, about 2 minutes per side. Let cool. Toss with cucumber, sage, olive oil, and salt. Sprinkle with pepper.

 Homemade Peach Salsa Recipe Trax Farms

Homemade Fresh Peach Salsa

1 pound Trax Farms peaches, peeled and diced
1/4 cup green onions, finely chopped
1 tbsp. fresh lemon juice
1 green bell pepper, finely diced
2 tsp. mint leaves, finely chopped
3 tsp. chile peppers, finely chopped
1/4 tsp. ground ginger

Mix well in mixing bowl or blend all ingredients in a blender for a smoother salsa. Refrigerate for 24 hours. This salsa freezes well. Yields: 2 1/2 cups.

 Homemade Melba Recipe Trax Farms

Farmhouse Melba

750 ml bottle of Peachful Peach, Chilled
750 ml bottle of Red Raspberry, Chilled
Peach Mango Mr. Flav, Chilled
Fill 3/4 of the glass with Peachful Peace wine. Add a splash of Raspberry red. Be careful to not add too much Raspberry, or it will overpower your drink. Top off with Mr. Flav to add some fizz. Serve instantly. Makes 4.
