Locally Grown Pittsburgh Strawberries in FieldNothing says summer than locally-grown, fresh-picked strawberries from the farm. At Trax, strawberries are one of the first Homegrown Crops of the year. We've been growing strawberries for over twenty years. You'd think we'd be tired of them by now, but there's just so many delicious things you can do with them. Here are a few of our hand-picked favorites from our Strawberry Recipes page. We also added a couple fun pairing ideas for Strawberry Wine

Fist thing first. It doesn't matter the cook, they all know it starts with the right ingredients. The best tasting recipes use the freshest ingredients. That's why our fresh-picked strawberries are an essential part of these homemade strawberry recipes. You'll be serving up what we just picked that morning. They only way you can get them fresher is if you pick them yourselves. Unfortunately, our U Pick Strawberry season got washed out with this week's rain and heavy picking from all the families that flocked to fields already. Just keep it in mind for next year, because it's a great educational, fun family activity.

Today, we're going to highlight some great strawberry desserts. We're all adults here, so who says we can't do dessert first?

 Hershey's Chocolate Strawberry Chiffon Squares Recipe 

Chocolate Strawberry Chiffon Squares

1 ½ cups cake flour
1 + ½ cup sugar, divided
½ cup unsweetened cocoa
¾ tsp. baking soda
½ tsp. salt
1 cup buttermilk
½ cup vegetable oil
2 egg yolks
2 egg whites
Berry Cream (below)

Berry Cream
1 cup Strawberries
1 cup heavy cream or whipping cream


1. Preheat Oven to 350°
2. Combine cake flour, 1 cup sugar, cocoa, baking soda and salt in large bowl.
3. Add buttermilk, oil, and egg yolks; beat until smooth.
4. Beat egg whites in small mixer bowl until foamy; gradually add ½ cup sugar, beating until very stiff peak forms.
5. Gently fold egg whites into chocolate batter.
6. Pour into greased and floured 13x9 pan.
7. Bake at 350° for 30 to 35 minutes or until cake springs back when touched lightly at center.
8. Cool in pan on wire rack.
9. Just before serving, frost top of cake with Berry Cream.
10. Cut into squares and garnish with strawberry halves.

Berry Cream
1. Mash 1 cup of strawberries in a blender or food processor to measure ½ cup.
2. Whip 1 cup heavy cream or whipping cream until stiff; gently fold puree, add 1 teaspoon vanilla and, if desired, 2 or 3 drops of red food color

 Easy Strawberry Cobbler Recipe Trax Farms

Strawberry Cobbler

1 cup flour
1 ½ tsp. baking powder
½ tsp. salt
¼ + ⅓ cup sugar, divided
¼ cup butter
⅔ cup water
2 cups Trax Farms strawberries, rinsed, drained, hulled
½ cup milk
In medium bowl, stir together flour, baking powder, salt, and 2 tablespoons of the sugar. With pastry blender or fingertips, cut in butter until mixture resembles coarse cornmeal. Set aside. In 1 quart saucepan over medium heat, combine ⅓ cup of the sugar and water. Cook, stirring until sugar dissolves and mixture comes to a boil. Reduce heat to low and simmer uncovered for 5 minutes. Spoon strawberries into a greased 1 ½ quart casserole and pour hot sugar mixture over berries. Immediately add milk to reserved flour mixture and stir until soft dough of drop-biscuit consistency forms, adding more milk if necessary. Drop by large tablespoons in 10 mounds evenly spaced over berries. Sprinkle with remaining 2 tbsp. sugar.
Bake at 450° until browned, 20-25 minutes. Serve at once or while still quite warm, accompanied with vanilla ice cream. Yields: 4 servings

. Simple Strawberry Wine Sangria Trax Farms

Trax Farms Strawberry Sangria

1 750 ml bottle Reflections of Lake Erie or white wine
1 750 ml bottle Strawberry Wine

2 Pints Sliced Trax Farms Homegrown Strawberries
1/4 cup Trax Farms Local honey
1 TSP Lemon Juice
Ice cubes

Mascerate Strawberries:
1. Under running tap water, lightly rinse the strawberries.
2. Pat the fruit dry to soak up any excess water.
3. Hull and slice the strawberries - You can leave them whole, but cutting them will allow more flavor to soak in.
4. Coat strawberries in honey until fruit is fully covered  and mix in lemon.
5. Chill Strawberries for 2 hour.

Sangria Mix:
6. In pitcher, stir together Reflections of Lake Erie, Strawberry Wine and chilled mascerated strawberries. Add sugar to taste.
7. Cover and chill for 1 to 4 hours. Serve in glasses over ice. Garnish with whole strawberries if desired.

If your guest like sweeter Sangrias, use Arrowhead's Niagra white wine instead of Reflections from Lake Erie. Not only is it sweet, but it will add some fun grape undertones to the sangria. What a little fizz? Feel free adding either Ginger Ale of Sprite right before serving. Have some fun expereimenting with the recipe and let us know what you think!

 Chocolate Strawberry Brownie Stack Trax Farms Recipe

Strawberry Brownie Stack

Mascarpone or Cream Cheese
Chocolate Hazelnut spread
Sliced fresh strawberries

1. Slice brownie through the middle.
2. Spread one slice with cheese and one slice with chocolate hazelnut spread.
3. Put together like a sandwich.
4. Spread top with some more cheese.
5. Top with strawberries. Sprinkle with powdered sugar or chocolate syrup before serving.

This is a really easy recipe because you can use pre-made brownies if you want! Pairs perfectly with this month's wine special: Arrowhead's Strawberry Wine.
