Shrimp Pickled Green Tomato Po Bo Recipe Trax Farms


Memorial Day is fast approaching and these easy recipes guarantee a fun, festive and delicious weekend no matter the weather forecast. Just make sure to take advantage of our Memorial Day Sale and all the great deals going on this weekend.

Green Tomato Shrimp Po Boy Sandwich Recipe

1 cup white wine vinegar
1 tbsp sugar
1 tsp salt
Sechler's Sliced Green Tomatoes
Barbecue Sauce (Creole, divided)
6 tbsps Boar's Head Savory Remoulade (plus more for topping)
1 1/2 lbs larg shrimp uncook (peeled and deveined)
2 Breadworks baguette 
6 lettuce leaves

Bring first 3 ingredients to a boil in a nonreactive saucepan. Strain and pour over Pickled tomato in a medium bowl. Chill at least 1 hour. Combine 3 tablespoons Creole Barbecue Sauce with Boar's Head Savory Remoulade; cover and chill. Marinate shrimp in remaining Creole Barbecue Sauce in a small bowl 30 minutes. Heat grill to medium-high; brush surface with vegetable oil, and grill shrimp about 2 minutes per side or until firm. Cut each baguette into 3 pieces, slice each piece in half, and toast.Spread Savory Remouladee mixture onto each baguette slice. Assemble sandwiches with lettuce, tomato, and shrimp, and top with additional mremoulade, if desired. Serve warm or at room temperature. Serves 6. For more yummy photos check out our Pinterest page


 Aspragus Gratin

Asparagus Gratin Recipe Trax Farms

1 lb. asparagus, stemmed and peeled 1-inch from bottom
6 slices prosciutto OR thin-sliced deli ham
3 tbsp. butter
½ cup fresh bread crumbs
½ cup shredded Gruyere cheese

Cook asparagus in pot of simmering water until tender (7 to 9 minutes). Drain. Divide asparagus into 6 equal bundles. Wrap each bundle with slice of prosciutto; place in shallow flameproof dish. Melt butter in small saucepan over medium-low heat. Add breadcrumbs; cook, stirring 1 minute. Pour mixture over each bundle. Top with Gruyere cheese. Preheat broiler. Place bundles under broiler until cheese lightly browns, about 1 minute. 


  Spring Asparagus Turnover

Memorial Day Picnic Ideas Fresh Asparagus Recipe

8 thin 6-inch asparagus spears
4 medium mushrooms, sliced
2 scallions, chopped
1 tsp. butter
8 oz. puff pastry
1 egg, beaten
1 cup Swiss cheese, shredded

Steam asparagus for 6 minutes. Rinse in cold water and cut in half. Set aside. Saute mushrooms and scallions in butter for 3 minutes ; set aside. On a lightly floured board, roll puff pastry into a 12-inch square. Brush with beaten egg. Divide into 4 squares. Top each square with ¼ cup shredded Swiss cheese, 4 pieces of asparagus, ¼ of the mushroom mixture and a dash of nutmeg. Fold over top to form a triangle. Brush with beaten egg. Seal edges with a fork. Bake at 400º for 20-25 minutes or until browned. Serves 4.


 Plum Glazed Chicken

Plum Glazed Chicken Recipe Trax Farms

1 can Oregon Purple Plums
2 T margerine
1 onion, finely chopped
1/3 C brown sugar
1/4 C prepared tomato-based chili sauce
2 T soy sauce
1 tsp ginger
2 tsp lemon juice
2 lbs skinless, boneless chicken

Preheat oven to 350 degrees. Drain the plums and reserve the syrup. Remove the pits from the plums. In a blender or food processor, whirl the plums and syrup until pureed. Melt margarine in a wide skillet over medium heat. Add onion and cook until soft. Stir in the plum puree, brown sugar, chili sauce, soy sauce, ginger and lemon juice. Cook, uncovered, stirring often until slightly thickened. About 15 minutes. Sprinkle the chicken with salt and pepper. Arrange the chicken in a lightly greased baking pan. Bake, uncovered, for 30 minutes, basting with plum sauce every 15 minutes. Turn the chicken over and bake, basting occasionally, for 30 more minutes. Heat the remaining sauce and pass it at the table. Check out Oregon Fruit for more great recipes.
