Mother's Day Brunch Ideas

Gluten Free, No Bake Strawberry Cheesecake

Cook time: 10 mins
Total time: 40 mins

This is the perfect gluten-free dessert to make for Mother's Day, or if you're patient, a great summer dessert with fresh PYO Strawberries from Trax. It also is really easy to make, which always helps. You could easily make the cheesecake into a square pan by doubling the recipe and cutting it into squares. Plus, if you're a Loyalty Club Member the GLutenWize Granola is on sale until May 15, 2014.

2 (8oz) Philadelphia Cream Cheese at room temp
½ cup Sugar
1 Packet of Knox Gelatine
1 Container of Fresh Strawberries
1 Cup Of Boiling Water
1 (12oz) Package of GlutenWize Triple Berry Granola

You will make your pie crust first in a 9″ round pie pan, just push the granola down into the pan to make your crust. Bake Crust at 350 for 5-8 minutes. In a bowl add your sugar and Knox Gelatine
Boil your 1 cup of water just till it starts to boil then mix in the bowl with the sugar and Knox Gelatine till they are completely dissolved. Add Your Cream cheese to your blender with your Knox Gelatine from bowl and add 8 Fresh Strawberries then blend it till it is smooth, it will turn a pink color from the Strawberries. Pour the ingredients from the blender into your Pie Crust. Place in the fridge for 2 hours and let it chill, until it is set. Cut more fresh Strawberries for on top of your cheesecake and make any design you wish to add garnish to your pie. Learn more Gluten Free Recipes at GlutenWize.

Boysenberry Cream Tart Oregon Fruit Trax Farms

Boysenberries Cream Pie


2 eggs
1/3 C sugar
1/2 tsp vanilla
1-1/2 C milk
1 can Oregon Boysenberries

Combine 2 slightly beaten eggs with 1/3 cup sugar, 1/2 teaspoon vanilla. Add 1-1/2 cup heated milk to this, beating constantly.
Pour into lightly greased pie pan of size you used to make pre-heated pie shell. Distribute in mix the well drained boysenberries from one can. Sprinkle with nutmeg.
Bake at 350 degrees for 25 - 30 minutes. Custard should be soft in center - it will set. Cool quickly. Run a knife around the edge and slide custard into baked pie shell. Slightly tricky but its nifty. Find more great recipes with Oregon Fruit Pie Filling at their Recipe Page.
